Nutritional yeast is inactive yeast grown on a mixture of beet molasses and sugarcane. Once the fermentation process is completed, the yeast is harvested, washed, pasteurized, and dried. It is an excellent nutritional supplement for vegetarians and vegans, as it provides complete protein (meaning it contains all the amino acids the body cannot produce on its own). A 2 tablespoon serving contains 9 grams of protein! It is called for in many vegan “cheese” recipes, and is often sprinkled over popcorn.
