Chicory Root Roasted
Roasted chicory root is widely used as a delicious coffee substitute. It contains up to 40% inulin, a type of fructan fiber, which has a profound effect on blood sugar. Chicory is also quite bitter, making it useful for stimulating gastric juices to aid digestion and reducing gas and bloating. It is good for those afflicted with poor fat digestion and assimilation. It is also a wonderful herb for the gallbladder, and may help prevent gallstones.
